Proper Nutrition for Children

Our future leaders are being developed right now – in your own home.  When I asked my 6 year old granddaughter what she would like to be when she grows up, she mentioned a few professional careers, to race horses, to be a nurse and of course a soccer player.

In order to help her body and mind grow to the perfect world I feed her 3 balanced meals and 2 healthy snacks per day, choosing organically grown vegetables, grass-fed beef and organic chicken, eggs, raw un-pasteurized milk and milk products.  I would squeeze oranges for her orange juice so that her body can absorb all of the bioflavonoids in oranges to make the vitamin C complete and most bioavailable to the cells in her body.  BUT the reality of our present life in this society makes it difficult.

Children are the largest target market in advertising – just watch TV for a few minutes and you’ll see how many companies are promoting unhealthy fake foods for the future generation of our country!

The purpose of this letter is to bring awareness to you or to whomever buys the food and brings it into your house for your family to eat.  Believe me, I know how much effort it takes to prepare a meal that is nutritious for you and your children…it is too easy to toss some food in the microwave and “voila”, dinner is ready.

In fact, food becomes poison due to the change in molecular structure that happens when food is exposed to high voltages and radiation in the microwave.  Since learning this information about microwaves, we no longer have one in our home.

What is the 80/20 Ratio?

80% of the time, eat healthy food and plan out your meals, but 20% of the time don’t stress about eating “healthy”.  For example, we plan our meals ahead of time and buy the following:

  • Organic produce
  • Free range chicken
  • Eggs from cage-free, free-roaming chickens
  • Raw milk and cheese
  • Raw milk can be hard to find, un-homogenized milk is 2nd best
  • Organic butter
  • Grass-feed beef
  • Wild-caught fish (ideally from the Pacific Ocean)
  • Home-made Pancakes (using unbleached wheat flour, raw milk, organic butter and eggs).  Using real foods, these pancakes are delicious!
  • Avoid diet drinks, bottled juices, etc.
  • Spring water is the best water to drink

Minimizing the Impact of Allergy Season

Spring is here and it’s a great time to get outside and enjoy the sunny weather, stop to smell the flowers, go the park, go for a hike or have great time at the beach and enjoy the view and sounds of the ocean with your family and friends.

Unfortunately for some us, Spring also brings the discomfort of allergies and hay fever from the blossoming tress and flowers. For some of us these beautiful blossoms cause a reaction when we are exposed to the allergenic dust from the pollen, etc.

These side effects can be decreased by reducing the intake of dairy products, simple white breads and pastas, and pasteurized juices (which are high in sugar).  In general, you should avoid ANY foods that are high in sugar or score high in the glycemic index chart (click here to check the glycemic index chart).

Are Allergies Affecting You??

Are you ever curious about why or how you get a running nose whenever you go outdoors?  Inside of our nose, we have nerve endings that sense foreign particles coming into our bodies. As an automatic response to the foreign particles, the hormone histamine is produced in our liver to get rid of the these foreign particles and then our nose runs.

Knowing this information, how can we assist our bodies to deal with the dust and tree/flower pollen that is in the air and naturally increase the anti-histamine hormone production?

Long-Lasting Effects of Abdominal Scars

This month, I would like to share some information regarding the long-lasting effects of abdominal surgery and abdominal scars!

Scar tissue is more serious of an issue than many people realize. Unfortunately, accessing a person’s organs, glands and spinal column is often only possible by going in through the abdominal wall. However, one should take into account the negative effects of scar tissue when making a decision to move forward with an operation.

With regards to abdominal surgery, patients frequently complain of deep pain around the stomach, not only throughout the weeks following the procedure, but 10, 20, and 30 years down the road. Why do you think this is?

The abdominal wall

The abdominal wall is an essential component of your core muscles, holding everything firmly in place to provide structural stability and prevent strain and injury. A stable core is an essential aspect of a balanced gait and maintaining proper posture.

This muscle group corresponds with the very simple to the most complex movements ever imagined. We are mesmerized by the delicate execution of well-trained athletes, dancers, martial artists, and gymnasts. These movements have everything to do with a stable, controlled core. We often do not take into consideration the sheer strength and stability necessary to perform some of these intricate movements.

Injuries or invasive procedures leave residual scar tissue which can hamper movement. Tightness and additional tissue buildup might also put pressure on certain vital organs and glands which the abdominal wall houses and protects.

Scar tissue near the spine

Structurally, your core is a key component in stabilizing the spinal column and protecting it from being injured. Very often, people who suffer from back pain near the spine are able to relieve it with core strengthening exercises. A strong core stabilizes your spinal column and promotes better posture. In the same way, scar tissue on or near the spine can cause tightness and immobility of the spinal column.

Transversus abdominis 

Each abdominal layer is designed to assist the core musculature with specific movements. The deepest layer is the transversus abdominis (or TVA).

Visualize the upper back and low back being two pieces of PVC pipe. The TVA is like the piece that secures them in the middle, assisting both pieces with rotation motions. Rotation without TVA stabilization is a sure way to get injured.

Without proper TVA activation, the body suffers from upper and lower body disconnect. It becomes unable to diffuse the force that comes from high impact. As you overcompensate for a weak core using other muscle groups, aches and pains are inevitable.

Lasting side effects

Taking all of that information into consideration, we can see why individuals suffer from long-lasting pain when they undergo an abdominal surgical procedure.

These are examples of some of the most common abdominal surgeries.

  • Appendectomy
  • C-section
  • Gallbladder removal
  • Intestinal removal/intervention
  • Hysterectomy
  • Tubal ligation
  • Vasectomy
  • Abdominal hernias
  • Lumbar spine surgery

When the four layers of the abdominal musculature get cut, the proper sequencing of stabilization becomes completely out of balance. The core engages 70 thousand milliseconds before any movement takes place. You could be prone to injury if there is improper activation.

The deep muscles in the lower back, pelvic floor and abdominal areas are all connected to the same nerve. A problem with any of those muscles can affect all the others.


Let’s talk about C-Sections for example. I have seen many females who have had cases where the scars cause problems with their lower back. This is due to the wrong sequence of muscle stabilization and the fact that they are not all activating properly. The tightness of scar tissue causes muscle strain, and other issues follow.


Scars can be treated through massage.

We use Wheat Germ Oil or Sesame Oil and apply it with medium pressure. It is applied for 2 minutes horizontally and 2 minutes vertically. Your skin absorbs these oils (which have a very high content of Vitamin E) and will help break down the scar tissue!

Stretching is also a way to help release the tightness in the abdominal wall. It is important to stay mobile through corrective stretches while treating scar tissue. You can also re-train your abdominal wall with a correct sequence of exercises that activate your core muscles.

This month we want to share some information with you about healthy ergonomics.  Ergonomics is the science of adjusting a work environment to fit your physical needs depending on your body’s deficiencies and work space.  According to the Institute of Ergonomics & Human Factors, ergonomics is “the application of scientific information concerning humans to the design of objects, system and environment for human use.”

This topic is applicable and extremely beneficial to all of you.  One of the most common areas where ergonomic principles should be  implemented is at desk jobs.  This will be my main focus today. The so-called “normal” pains of daily life are surely preventable, and I trust that this information will motivate you to take action to take care of your body!

What’s the problem?

The subject of ergonomics is one that is being more frequently addressed by employers.  As postural problems become more prominent, awareness is increasing.  Many companies are discovering that an employee’s performance is negatively affected due to pain and discomfort and that poor ergonomics are contributing to poor performance.  When people are in pain, their energy drains.  Focus and concentration becomes limited when the body is distracted by discomfort

Musculoskeletal issues have almost become the norm.  This should not be the case. Certain sitting positions, the height of your eyes in relationship with the  monitor, and how far you have to reach to contact your keyboard or mouse are all factors that can cause serious pain if you’re not positioned correctly.


Ergonomists are trained professionals, who evaluate work environments and adjust them to fit the needs of their clients.  They are technicians who can fit people to achieve a proper seated position, desk and monitor height, and placement of the keyboard and mouse to avoid muscle strain.

Ergonomically correct setups can help to prevent pain and long-term damage to the body.  In addition to a correct ergo setup, correct posture is also necessary.  Becoming accustomed to sitting in a a slouched position is extremely detrimental to your spine.  Take a look at this diagram as an example of the proper way to sit.

New Ergonomic setups   

The increasing number of low back pain cases have put pressure on the ergonomic industry to develop a wider variety of options for people in their diverse work situations.  These newer developments include a standing desk that can adjust to a seated position when needed.  Also, if an office worker would like to burn some calories while working, treadmill desks have also been developed.  How about that?  Would you like to walk 3 miles per day without ever leaving your office?  As a person adapts to walking, or even just taking the time to exercise throughout the day, their circulation improves.  In contrast, being seated for long hours cuts off circulation.

Achieving good posture

Although sitting properly is surely a key aspect of maintaining good  posture, we face a great challenge.  Everybody obviously wants a “quick-fix”, but switching to an ergonomically correct chair may not actually correct poor posture.  The key to avoid dysfunction and relieve pain is to have proper posture to begin with.

If you want to correct your postural flaws, two vital steps are corrective exercise and stretching.  This will help mobilize and properly build your muscles.  A stable core and strong deep spinal muscles in your back are what is needed to maintain correct posture.  They must be functioning properly or re-trained to hold your body in proper alignment.  If your healthy posture-promoting muscle groups are not in action, it won’t matter how great or expensive one’s ergo setup is.  Pain and discomfort will still be present as the actual problem has not been corrected.


Consider having a professional ergonomist evaluate your work station.   Assess your own set-up using the diagram above.  Look for functional and inexpensive options such as switching out your chair for an exercise ball.  This is one of our favorites since the ball can be used for  stretches and exercises right at the workstation.  Have a basic set of movements that you can use regularly to keep your body flexible throughout the day.  I speak from experience when I say that taking time to stretch is refreshing and energizing.  Bu taking time to do this, I am able to work more efficiently!

The Bitter Truth About Sugar

This month I want to talk to you about sugar.   Although this topic can be controversial, it is definitely worth discussing.  I’d like to touch on a couple of points in attempt to make some sense of questions you may have about this old spice that we have a  “love-hate” relationship with.  Sugar was a luxury nicknamed “white gold” by European traders; a desired, costly product.  Unfortunately, the sugar that we use in the 21st century is a far cry from sugar in its early years.

As I remember growing up in Mexico, I recall seeing big chunks of molasses in the shape of cones called “piloncillo”, a raw, brown sugar produced by farmers.  Sugar in it’s unrefined state has minerals and a robust dense flavor that most of us are not used to.  When sugar is highly processed, it is bleached and completely void of any of it’s natural minerals.  The sparkly white particles are pleasing to the eye and refined white sugar is the top selling sugar in any of its forms today.


Because of the extensive, chemically altering process that sugar goes through from plant to highly refined, the nutritional value of the sugar we consume is next to nothing.  There is a lot of noise surrounding this subject: “Sugar will cause diabetes” and “sugar makes you gain weight!”  Some of this information circulating may be true.  However, I believe that this kind of publicity leads to further detrimental concerns.  When hype circulates regarding the dangers of sugar, alternative sweetener companies have an open door opportunity to push their low-calorie, chemically enhanced artificial “sugars”.

Don’t be mislead.  Any product with zero calories gets its sweet flavor from complex chemical enhancement!  Sugar substitutes that contain aspartame and sucralose are known to cause brain dysfunctions and are damaging to our nervous system to say the least.  Aspartame is reported by the FDA to cause severe damage to the medullary sheathe of the nerve, which leads to nerve degeneration.  Is this poison worth consuming for the sake of saved calories?  We love to eat sweets but we don’t want the calories that come with them.  Putting our nervous system at risk is not the answer.

Broaden Your Taste Buds

If we would pay closer attention to what we are putting in our mouths, it is evident that many sweetened foods are very similar in taste.  You may realize that the after taste of a pastry, ice cream, or soda is almost the same, even though the soda pop may have high fructose corn syrup, another chemically refined sweetener. Your taste buds react in the same manner, and your body and mind become accustomed to that “sugar high” experience.  I would encourage you to broaden your tastes by incorporating natural sweeteners with more nutritious value, such as stevia.

When we eat something sweetened with a natural sweetener, we canot expect it to have that overly rich sugary flavor that we have become dependent on.  Sweeteners that are more beneficial to us may not give the same immediate satisfaction, but we should really consider adding a natural alternative to things you want to sweeten instead!  Putting something like honey in your coffee or iced tea is a great alternative to help avoid the damage that white sugar does to your system.

Proper Ratios

In reality, the foods that we eat should be balanced and contain the correct portion of carbohydrates, fats and proteins.  The “no carb” fad pushes a diet that can be void of essential nutrients, depending on your metabolic type.  The brain must have a certain amount of glycogen to function properly.  Without it, we can become disoriented and foggy.  Your system will weaken as your blood sugar drops.

Avoiding this crash comes down to how you prepare your meals. You can keep your blood sugar levels even throughout the day by consuming a combination of foods with proper balance.  Eating processed sugars without fats, proteins and good minerals creates a release of insulin into the blood stream, causing blood sugar levels to plummet after the initial spike.  People who consume large amounts of sugar without including sufficient nutrients into their diets are the ones who run into serious trouble.

In conclusion

The amount of sugar that you put into your body is what’s most important!  For some of us, cutting it out may seem completely impossible.  Make wise choices, balance your diet and don’t eat it daily.

If you’re eating sugar all the time, your brain will develop a dependency.  This is not healthy.  If your diet is nutrient rich, it can handle a cookie every now and again.  However, having your body rely on sugar to keep it going rather than eating actual whole foods leads to countless issues and is’s not worth it!

Purify Your Body: Why Detox?

The human body is a magnificent system of systems that goes through countless processes every day, every hour, minute, and second of our lives.  It is designed to utilize nutrients as a means to gain energy, grow, rebuild, and heal. Like a car burns gas to travel from one place to another, our bodies are fueled by the food that we eat and our choice of food is reflected in how our bodies preform. This month I would like to talk about the body’s need to cleanse.  Many of the issues that we suffer from are a result of bad choices that we have been making for several years, or maybe our whole lives.  The build-up of toxins along with over-consumption of sugars and carbohydrates wear and tear on your system, causing it to not function properly with all of the “poisonous” overload.

Toxic Build-Up

There is a lot of information circulating these days warning us to avoid pollution.  Our common sense will confirm this necessity as we learn more about the lack of cleanliness in the air that we breathe.   Polluted air is practically unavoidable in heavily populated regions.  It is everywhere we go.  From the fabrics we wear, to what we drive; from where we live to what we eat.  Although it is minimal in certain environments, it seems impossible to escape even the smallest quantities.

Despite this fact, we have the ability to equip ourselves with a body that will effectively get rid of toxins.  Damaged cells that have been polluted throughout the day will be regenerated if our filters are functioning optimally.  A healthy body will be equipped and well-prepared to guard our systems from harmful compromise.  This is the only way we can truly protect ourselves from toxic pollutants.


What we eat and how our body digests food is an important factor in every aspect of our health.  All systems in our body gain fuel to function through the nutrients that we absorb through our diet.  We shouldn’t be surprised when we make bad food choices then suffer from random health issues.

Like any system of energy combustion, foods that are consumed by us will leave a residue on the wall of our digestive tract, as well as on the lining of organs that filter blood: The liver, kidneys, lungs and lymphatic glands. This build-up of residue becomes toxic over time, depleting the efficiency with which each organ has the ability to function. The absorption of vital nutrients that would come from healthy food diminishes.  That ‘crisp’ vitality wanes, and the body begins to fatigue, resulting in a predisposition for illness and injury.  Our intestinal tract is lined with immune receptors. A thickening layer of pollutant residue increases the chances of illnesses from the common cold, diarrhea and constipation, to muscular skeletal aches and complications.

How  to Detox

There are many ways to detox our bodies, however it is extremely important to research your chosen method thoroughly, and understand the process and effects of each one.


Some forms of detoxification are as follows:

  • Fasting-Water Detox: This is a 12 – 24 hour detoxification that is focused on water consumption only.  It can be difficult because the lack of solid nutrients can make you feel very tired and weak.  It is recommended that you arrange to have the day at home or be in a relaxed environment if you decide to do a water detox.
  • Fasting-Juice Detox: A Juice detox is a flexible detoxification method that can last from one day to several.  This is a similar method to the water detox listed above, however, juices are added to the mix.  You may drink as much and as often as you wish, customizing your juices with specific fruit, vegetables and legumes. Celery, cucumber, spinach, kale and other chlorophyll rich leafy greens are excellent additions to juicing mixes.  You should use the best quality seasonal products you can find.  
  • Herbal Fiber Detox: This is a more aggressive form of detox.  It includes drinking a shake made from a herbal fiber powder that will induce bowel movements, ridding the body of impurities.  Care must be taken, as mild cramping can occur.  This side effect will decrease to none as the body cleanses. You should consume the shakes 20-30 minutes before a healthy meal to avoid any interference with the normal digestion of food.

Individuals should really consider all aspects of their health and well-being when considering a detox plan.  It should be understood that you need to commit yourself to a certain length of time. Positive results come from careful selection of your foods and the possibility of any sources that may cause allergies or sensitivities to your digestive system.  Some common suspects may be corn, soy, wheat products, eggs, peanuts, tomatoes, chocolate, etc.  Always consider a higher content and range of vegetables, lean red meats, and non-hormone treated poultry and fish.  Low sugar fruits like blueberries, green apples, plums or pears are also ideal additions to a regular cleansing diet.

Are you committed to your health?

The purification of your digestive system will take time and effort on your behalf, but there is truly no price on vitality and good health.  I would like to suggest that a customized 21-day program might be just the thing for youl!

This program is broken  into 3 phases. It focuses on individual organs and systems. It will enable the body to support itself during the cleanse and create solid foundations for continuing digestive health.

Day 21 marks the ending of phase II with a complete sense of rejuvenation!  The absolute key to this kind of detoxification, or any similar program, is the slow reintroduction of foods that have possibly caused allergies or sensitivity in the past.  I believe that this is the most important factor while purifying body systems.

Accompanied by a healthy lifestyle of physical and mental exercise, it is easy to avoid the ‘binge’ phenomenon that people can fall into so often after a detox.  Breathing exercises, yoga, sauna baths, massage and lymphatic drainage are all recommended to accompany this kind of serious detoxification program.

In Conclusion

I would recommend having an official record of how you feel before the beginning of the program.  I use a Systems Survey form to define the major stressors that the body is suffering from.   When you fill out this form again at the end of the program, you will be able to see how much progress you’ve made!

Reintroduce one food at a time every 2 days to see if any of your previous symptoms return.  If they do, then you will have a great system to identify what causes intestinal bloating, diarrhea, constipation, headaches, etc. that you may have suffered from previously.
